Almond Flour Cupcakes For A Busy Day!

Have you found it difficult to keep up with a healthy diet on crazy days? We all have our days where we don’t have time to cook or stop to buy a healthy snack. For those days, here is a healthy recipe to stay on track, focus and provides energy to keep up with all our busy schedules.

As a teacher I find it difficult to have a snack in-between my classes. And it is more difficult to find a healthy snack that provides me energy to keep up with all those energetic kids. So I decided to prepare myself ahead and cook cupcakes on Sundays for the upcoming week.

Almond Flour Cupcakes For A Busy Day!

You will need

  • 12 tbsp of almond flour
  • 12 egg whites
  • 1 cup of almond milk
  • 1 pinch of cinnamon
  • 2 tbsp of cacao powder (optional)
  • 1 tsp of vanilla extract
  • Stevia (add it at your preference)
  • 2 tsp of baking powder.
  • 1 tbsp almond butter (or peanut butter)

Optional: Organic bitter sweet dark chocolate chips

Steps

  • Preheat the oven at 250F.
  • Add all the ingredients on a blender. (except the chocolate chips)
  • Add the mix into a cupcake or muffin pan.
  • Add the chocolate chips on top.
  • Bake for 20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.

I also like to add ½ tbsp of some nut butter in the center when they are baked to add a little bit of texture. Or you can top the cupcake with yogurt:

  • ½ cup of greek yogurt
  • 1 tbsp of stevia
  • 1 pinch of cinnamon
  • A little bit of honey.
  • Add this mix when they cool off.
