Baby Spinach With Avocado Pasta

Ingredients 

  • 350g  baby spinach
  • 1/2 cup of raw cashews
  • 1 cup of water ( add more if needed)
  • 15 grams of butter
  • 2-3 garlic cloves, roughly chopped
  • salt
  • 2 avocados
  • Pasta or rice of your choice

 

  • Instructions 
  • Combine the cashew and water in a blender and blend until smooth and creamy.
  • In a large pot add butter and baby spinach.
  • Slowly add the cashew cream together with garlic and water and mix on a low fire until creamy texture.
  • Blend everything until smooth, add the avocado and serve with whole pasta or rice.
