Baked Green Vegetable Medley

This recipe is a tasty way to eat the greens.

Ingredients

  • Asparagus – one bundle
  • Broccoli- 2-3 cups
  • Brussel spouts – 2-3 cups
  • Garlic – one bulb
  • Olive oil – 2 tablespoons

Directions

  • I use parchment paper in order to avoid vegetables sticking to the pan
  • Place the parchment paper on a baking sheet
  • Spread the asparagus, broccoli and Brussel spouts on the pan
  • Cut up the entire bulb and place throughout the vegetables on the pan
  • You don’t have to use this much garlic, but I love it
  • Drizzle the olive oil over the vegetables and salt and pepper if you like
  • I cover the medley with tin foil and put in the oven for 40 minutes at 375 degrees
  • The medley requires this long in order to soften the Brussel spouts

This makes a wonderful side or a dish on its own, enjoy!!
