Carrot Ginger Soup

Ingredients

  • 1 Tbs olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, peeled and chopped
  • 1 Tbs fresh ginger, peeled and chopped
  • 1 tsp turmeric
  • 1 tsp cumin
  • Approx. 6 cups, peeled and chopped carrots
  • 1 large sweet potato
  • 6 cups homemade vegetable or chicken broth
  • 2 Tbs honey

Method

  • Heat oil over medium heat in large stock pan. Add onion and ginger and cook for about 5 mins
  • Add turmeric, cumin and garlic; cook for 30-60 secs
  • Add carrots, sweet potato, honey and stock and cook until vegetables are tender, approx. 30-40 mins
  • Puree in blender, add lemon juice, and season with pink Himalayan salt and pepper
  • Serve with a sprinkle of raw pumpkin seeds on top
