Cherry Walnut Breakfast Bread

Are you in need of a nutritious and quick ‘breakfast-on-the-go’?

Try this recipe toasted and topped with nut butter or home-made jam.

Cherry Walnut Breakfast Bread

Ingredients

  • 4 eggs
  • 1 1/4 cups clarified butter or ghee
  • 1 1/4 cups spelt flour
  • 1 1/2 cups organic rolled oats
  • 1/2 cup honey
  • 1 tsp. baking powder
  • 1 cup dried cherries*
  • Handful of dry roasted walnuts or pecans
  • 4 Tbsps nut butter

Directions

  • Heat the oven to 350 degrees
  • Whisk the eggs until frothy; add the butter and whisk for about 3-5 more minutes.
  • Add the dry ingredients, honey, cherries and nuts; mix well.
  • *No cherries?  Try cranberries or raisins.
  • Pour into a non-stick or lightly greased loaf pan.  Bake for about 35 minutes.
  • Opt: add cinnamon and ‘swirl it’ into the pan before baking.

Done!  Not only a quick breakfast to eat, it’s quick to make, too.
