Curry Red Lentils

After reading about the importance of variety in the diet, I started eating foods that I never considered eating before, such as split-peas, chickpeas, and lentils. I came across red lentils at a local Bulk Barn, they were super cheap considering the nutritional value they hold. The red lentils were $2.40/ per pound and I filled 1/2 a bag (the bags are huge by the way) which ended up making 8-10 individual meals–as one serving is 1/2 cup.

Ingredients

  • 2 cups of Red Lentils (from Bulk Barn)
  • 1/2 Chopped Onion
  • 1 tbsp Curry
  • 1 tbsp Madras Curry
  • 1/2tbsp Cumin
  • 2 tbsp of your choice of Oil (Safflower, Olive, or Canola etc…)

Directions

  • Add 2 cups Red lentils to a medium-sized pot;
  • Add 1 tbsp curry, 1 tbsp madras curry, and 1/2 tbsp of cumin to Red lentils, fry lentils with spices on medium heat for 2 minutes;
  • After 2 minutes of frying the spices with the Red lentils, Add water or chicken broth to cover lentils;
  • Boil on medium heat for 30-40 Minutes or until desired texture. Stir occasionally, and add extra water as needed.

This recipe serves 4 people, enjoy it as a side dish 🙂
