Easy to Make Dahl

This recipe is not only easy to make but it makes a lot so you can always freeze some for an easy go-to dinner for those busy days!!

Dahl is a traditional dish from India, made with red lentils and spices. The lentils are a great source of protein and the vegetables, herbs and spices are a good source of vitamins, minerals and phytochemicals. Add some rice or quinoa to make a complete nutritional meal.

Easy to Make Dahl

Ingredients 

  • 2 organic cooking onions
  • 1 organic carrot
  • 4 cloves of organic garlic
  • 3 tablespoons of minced fresh organic ginger
  • 2 teaspoons curry powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon tumeric
  • 2 1/2 cups of red lentils
  • 8 cups of vegetable stock
  • 1 3/4 cups of coconut milk
  • 2 green onions
  • 1/4 cup chopped cilantro
  • 2 tablespoons vegetable oil

Directions

  • Heat oil in large frying pan or wok over a medium heat.
  • Stir in onions, carrots, garlic and ginger. Cook for 5 minutes or until onions are softened.
  • Stir in curry powder, cumin and tumeric and cook for 30 seconds.
  • Add lentils, vegetable stock and coconut milk and simmer for about 20-25 minutes until cooked. Lentils will have softened and the dish will look golden.
  • Now all you have to do is add it on top of a bed of rice or quinoa or enjoy it on it’s own with a little cilantro and green onions on top.
