Meal prepping isn’t a new concept. Spending an hour or two getting food ready for your lunches and dinners is one way to ensure you have healthy options on hand throughout the week. But many people forget about breakfast. Let’s face it, mornings are busy. So why not have something you can easily grab for yourself or the kids to make sure you start the day with a nourishing breakfast! These mini frittatas take under 10 minutes to prepare. And the variations are limitless. Ham and cheese with broccoli, tomato and basil, mushroom and leek. The recipe below is one of my favourites.
Easy Mini Breakfast Frittatas
Ingredients
- 8 eggs
- 1/2 cup milk (cow or nut milk will work)
- 1 cup cooked sweet potato, cubed
- 1/2 cup feta, crumbled
- 1/2 cup parsley, chopped
- 2 tsp Italian seasoning
- salt and pepper to taste
Instructions
- Preheat oven to 350 degrees
- In a large bowl, whisk eggs.
- Add milk, sweet potatoes, feta, parsley and Italian seasoning.
- Season with salt and pepper.
- Pour in 12 greased muffin cups.
- Bake 20 minutes or until center is set.
Keeps in the refrigerator up to one week. Can also be frozen for one month.
