Homemade Cinnamon Cranberry Granola

With all those processed sugar-laden cereals in the supermarkets, people are turning to buying healthier versions for their families. So what do we turn to? Granola. Telling ourselves, “that’s healthy,” yet when you check the ingredients you find, it is no healthier than all the rest. What to do? Make your own. Here is a granola that is healthy for breakfast, easy to make, and tasty too. Your family will love it.

This homemade granola uses honey and maple syrup as a sweetener, and contains almonds. For more clusters add 1/2 a cup of almond meal

yields: about 4 qt. jars of granola

Cinnamon Cranberry Granola

Ingredients

  • 7 cups old fashioned rolled oats
  • 1 cup coconut oil, melted
  • 1 cup sliced almonds
  • 1 cup pumpkin seeds
  • 2 tbsp cinnamon
  • 1 tbsp vanilla
  • 1/2 cup honey
  • 1/2 cup maple syrup
  • 1 cup unsweetened dried cranberries
  • 1 cup organic raisins

Directions

  • Preheat oven at 350 degrees.
  • Place the oats, almonds, pumpkin seeds and cinnamon in a large bowl and mix well, put aside.
  • Melt coconut oil and place in a bowl with the honey, maple syrup, and vanilla, mix together.
  • Now pour the oil mixture into the oat mixture and mix well.
  • Line a baking pan or deep cookie sheet with parchment paper, and pour the granola mixture in the pan,  spread out evenly.
  • Place in oven, check every 5-7 minutes, mix around with spoon so that it roasts evenly.
  • Once it is golden brown approximately 1/2 hour.
  • Take out of oven and mix in the cranberries and raisins.
  • Let cool.
  • When cool break up the granola and place in air-tight jars.
