Lentil And Brown Rice Casserole

Ingredients

  • 1/2 cup white wine
  • 1 1/2 cups chicken or veg stock, low sodium
  • 1/2 cup dry green lentils
  • 1/2 cup brown rice
  • 1 cup crushed tomatoes, low sodium
  • 1 medium onion, chopped
  • 2 cloves garlic, chopped
  • 1/4 tsp thyme, basil, and one bay leaf
  • Pinch of pepper
  • 1/2 cup Swiss cheese, grated

Method

  • Add all ingredients into casserole dish, except for cheese
  • Bake, covered, at 350F for 1 1/2 hrs
  • Remove lid and add cheese; return to oven for 5 more minutes
  • Serve
