Sweet potatoes are not only delicious, but their Vitamin A is through the roof, making them excellent for vision and brain function. They’re also a fantastic beauty food thanks to Vitamin A’s role in healthy skin.

Simple Meal Idea: Loaded Sweet Potatoes

Simple Sauce Recipe

Ingredients

  • 1 cup coconut milk
  • 2 tsp curry paste, any (I like yellow or red)
  • 1/2 tsp few drops of lime juice
  • Pinch of sea salt
  • Pinch of coconut sugar

Method

  • Whisk ingredients together
  • Refrigerate to thicken

Roasted Chickpeas

Ingredients

  • 1.5 cup chickpeas
  • 1 tbsp oil
  • Sprinkling of spices (I like paprika & curry powder)

Method

  • Preheat oven to 400
  • Shake ingredients together in a closed container
  • Spread on baking sheet
  • Roast for 30-45 minutes, turning once, until desired crunch achieved

Sweet Potatoes

  • Halve and bake sweet potatoes at 400 until cooked through

Then throw it all together and top with whatever you like. Pictured is chopped cilantro and organic sriracha.
