This breakfast favourite is an excellent nutrient-dense meal that’s easy to make and super tasty.
Tofu Scramble
Ingredients
- 1 full package of extra firm tofu – crumbled
- 1/3 cup of chopped onion (red)
- 1/2 cup of chopped mushrooms
- 1/2 cup of chopped red/yellow peppers
Spice Mix
- 1/4 tsp cumin
- 1 tbsp nutritional yeast
- 1/2 tsp of fresh or garlic powder
- 1/4 chilli powder
- 1/2 turmeric
Instructions
- Crumble an entire package of tofu into a mixing bowl and add the spice mix, stir well.
- Using the chopped red & yellow peppers, onions & mushrooms place in a large frying pan saute (no oil needed, just use water) until tender stirring often.
- Place crumbled tofu into the frying pan mix well and heat thoroughly.
- When Tofu is heated all the way through serve with fruit, bread or assorted greens.
