Vegan Camping Meal Prep

Preparing for a camping trip can be so much work it makes it more of a stressful task than a fun weekend get away. I put together this super easy camping menu that required minimal prep and fast cook time. Enjoy!

Breakfast: 

  • Muesli and almond milk
  • Bobs Red Mill is my favourite muesli

Lunch:

  • Wild rice salad with chickpeas and walnuts (Prep before hand)
  • Wild rice
  • Roasted chickpeas with cumin, garlic, chilli powder
  • Toasted walnuts
  • Chopped up greens

Dinner:

  • Roasted potatoes, tofu and grilled vegetables
  • Chop them all up and toss in olive oil and favourite spices (prep before hand)
  • Place in tin foil packets and toast over the fire!

Easy snacks:

  • Brown rice cakes with hummus
  • Veggies and hummus
  • Roasted chickpeas
  • Apples
  • Nuts

Bonfire treats: (because whats camping without treats?)

  • Banana boats: Cut a banana in half and place pieces of dark chocolate in the middle. Wrap in tin foil and cook over fire until chocolate is melted. Open tin foil and drizzle with peanut butter yummmmmm
  • Veggie dogs
