Since I became vegan, people often ask me what I eat for breakfast. I’m an active women who love hiking few days a week, so I need to get enough protein to give me energy and have good muscle and joint recovery. So here is one of my favourite recipes. Vegan sausage tofu scramble!
Vegan Sausage Tofu Scramble
Ingredient
- Vegan Sausage
- 450g of soft Tofu crumble
- 1 small onion
- 5 mushrooms minced
- 1 red bell pepper diced
- 3 tbsp of Nutritional yeast
- 1/4 tsp Tumeric
- 2 tbsp of chives for garnish
- Himalayan salt and pepper to taste
Instructions
- Start to cook the onion in a pan until it becomes soft
- Scramble the tofu and add to onion
- Add all the rest of the ingredient in the pan (except chives)
- Stir until hot enough
- Serve with chives on top
