Cacao Cures
If you’re already craving chocolate, cacao is the way to go! High levels of flavanols make this powder one of the most powerful antioxidants available. Choose a cacao that hasn’t been treated with alkali, as this process removes the flavanols. Sweet Hazelnut Brownies
Ingredients
- 450 gr sweet potato (baked)
- 2 TBSP soy protein (powdered)
- 135 gr almond butter
- 1 tsp vanilla extract (alcohol-free)
- 30 gr almond flour
- 30 gr unsweetened cacao powder
- 1/4 tsp baking soda
- 1/4 tsp sea salt
- 30 gr hazelnuts, chopped
Directions
- Preheat oven to 220°C. Wrap sweet potato in foil and bake until tender, about 40 minutes. Once cooled down the skin will have loosened, making it easy to remove.
- Weigh out 450 gr. and save any leftover sweet potato for another meal! Blend in Ninja Blender or by hand in a medium bowl.
- Reduce oven to 175°C.
- In a small bowl, whisk soy protein powder with water until it reaches an egg-like consistency (about 6 TBSP). Add to the mashed sweet potato.
- Add the almond butter and vanilla, stirring to combine if baking by hand.
- Add almond flour, cacao, baking soda and salt. Blend or stir until just mixed.
- Lightly coat an 8×8″ baking pan with coconut oil. Dump batter into the pan, using a spatula to spread it out evenly.
- Top with chopped hazelnuts
- Bake until set and the brownie starts to pull away from the edges, about 25 minutes. Let cool at least 10 minutes before cutting into 9 pieces.
