Tacos were actually one of the first meals that got me cooking. I was looking for something simple, yet fresh, to get me started and they definitely did the trick. These fish tacos are light and tasty and provide you with a good balance of nutrients. The best part is that they can be easily tailored to your specific tastes. Simply add-in or take away to create your own delicious taco tailored just for you!
Start to finish you could be enjoying your meal in just 15 minutes!
Makes 4 tacos.
Fresh Fish Tacos
Ingredients
- Whole grain or corn tortillas
- Cabbage Slaw
- 1 ½ cups of shredded red cabbage
- ½ cup plain Greek yogurt
- ½ cup of diced red onion
- 1 lime, juiced
- Pinch of sea salt
Fish
- 2 fish fillets of your choosing (I like to go with cod or halibut)
Seasoning
- ¼ tsp cayenne
- ½ tsp garlic powder
- ½ tsp cumin
- ¼ tsp sea salt
- ½ tsp pepper
Toppings
- Cilantro
- Lime
- Avocado
Directions
- In a large bowl mix together red cabbage, red onion, yogurt, lime juice and pinch of salt. Cover and chill in the fridge until ready to serve
- In a small bowl mix together cayenne pepper, garlic powder, cumin, salt and pepper
- Season each fillet on both sides
- Over medium heat, cook fillets for about 8 mins, flipping halfway
- Use a fork to pull fillets into bite sized pieces
- Warm tortillas in a pan
- Remove warmed tortillas, assemble tacos, add toppings, and enjoy!
