You can’t go wrong with a meat free, dairy free, gluten free Mexican Bowl especially when it tastes and looks this good. Mexican made easy the vegan way is so delicious and highly nutritious full of fiber, protein and healthy fats! It’s high fiber content will keep your digestive system functioning nicely, high protein to keep your immune system healthy and the healthy fats along with the protein helps your body feel fuller longer.
- Red rice is rich in fiber, high in iron and a good source of antioxidants
- Beans are high in protein, fiber, magnesium, iron and calcium
- Avocados are a good source of potassium, B vitamins, essential fatty acids and Vitamin C
Now for the fun part… How to make it?
Healthy Vegan Mexican Bowl
Ingredients
Rice – Lentils – Guacamole
- 1.5 cup cooked organic red rice
- 1 cup cooked red lentils
- 1 red capsicum
- 1 red onion
- 1 tomato
- 2 garlic cloves
- Rock salt to taste
- 1 teaspoon cumin
- 1 teaspoon paprika
- Olive oil
- 1 ripe avocado
- 1/2 Lemon
- 1 red chilli
- handful of fresh coriander
- Jalapenos
Method
Oil the pan and when heated temper the cumin and paprika, add in chopped garlic and 3/4 of the chopped onion, stir fry until onions white, then add 3/4 of chopped tomato, chopped capsicum and lentils.
Let all the flavours cook through and vegetables to slightly soften then add in the cooked red rice last, add salt and pepper to taste and any additional chilli if you like it spicy.
Guacamole
In a bowl add 1 ripe avocado, juice of 1/2 a lemon, splash of olive oil and crush avocado to make into a creamy dip. Add the remaining 1/4 of red onion and 1/4 of tomato, chopped chilli and chopped coriander.
Serve the rice and lentils warm in a beautiful bowl and top with a heaping of delicious guacamole, handful of jalapenos and garnish with fresh coriander.
