Pecan Pie Parfait for Breakfast!

As the holidays approach, inevitably, it becomes a bit of a challenge to remember that once a year “treats” are just that… TREATS.

When seasonal goodies begin to show up in droves at the office, in the classrooms, on the porch from well meaning neighbours who “baked extra,” and from Grandma’s who equate food with love, it can take nerves of steel to exercise self control and choose fruit over pie.

I make it a priority to begin preparing my clients for this season before Halloween even arrives. We talk about several things:

  • That these 1 day holidays of enjoying food are NOT what can derail us, but that snacking on the junk before/ during/ and after will.
  • That it’s okay to decline things we don’t absolutely love and not feel guilty.
  • That we should always begin our day with a protein packed, yet balanced breakfast as step 1 to setting ourselves up to success for the day.

Let’s face it- if you’ve skipped breakfast and arrive at the office hungry, it just became unreasonably hard to say “no” to the cream cheese stuffed, pumpkin spice, pecan topped muffin left on your desk by a well intentioned co-worker.

As the season moves along, I share EASY meal ideas to allow us to enjoy the seasonal flavors while still feeling great & meeting our health goals.

The Pecan Pie Parfait is a product of this goal and has been enjoyed many times in our client group. These can even be batch prepared for the workweek, as they keep in a sealed container.

Ingredients: (purchase organic when available)

  • Container (or containers if bulk preparing)
  • 100g 2% Vanilla Greek Yogurt
  • 50g 0% Plain Greek Yogurt
  • 1 tbsp Neufchatel Cream Cheese, softened
  • Splash Vanilla Extract, to taste
  • 1/8c chopped pecans
  • ½ sheet Graham Cracker, lightly crumbled
  • Cinnamon, to taste

To prepare:

  • Combine and mix well: yogurts, Neufchatel cream cheese, vanilla extract
  • Spoon into serving (or storing) dish
  • Top with pecans & crumbled graham cracker
