This recipe makes me excited! You will be too when you try them. They’re too good not to share!
Wild-Rice Waffles
Ingredients
- 2 large egg whites
- 1 cup brown rice flour
- 1/3 cup organic tapioca flour or arrowroot starch
- 2 tsp. baking powder
- 1/2 tsp. cinnamon
- 1/4 tsp. sea salt
- 1 Tbsp. ground flaxseed
- 2 large eggs
- 3/4 cup almond milk or rice milk
- 1/4 cup vegetable oil
- 1 Tbsp. Maple syrup or Agave syrup
- 2/3 cup cooked wild rice (or brown rice)
Instructions
- Preheat waffle iron.
- Whip egg whites with an electric mixer until stiff peaks form; set aside.
- In a large bowl, whisk together flours, baking powder, cinnamon and salt.
- In another bowl, whisk together flaxseed, eggs, milk, oil and maple syrup.
- Add the wet ingredients to the dry ingredients. Stir in the cooked rice.
- Now fold in the egg whites, 1/3 at a time, gently; be sure not to deflate the egg whites.
- Grease the waffle iron (I used coconut oil) and fill 2/3 full. Cook about 2 1/2 minutes. Softer waffles, check at 2 minutes; crisper waffles go to 3 minutes.
Makes 12 waffles.
Serve with fresh blueberries, raspberries, strawberries, or a mixture! I also drizzle either a Carob syrup extract or top with applesauce! The last time I made these, I did half vegetable oil and half flaxseed oil, for an extra boost of Omega 3’s. The best part is this: you can freeze pre-made waffles and pop them into the toaster anytime! Variations are endless! I hope you enjoy these as much as I do!
