I love cooking with nutrition-rich zucchini.
This super nutritious veggie is often used as a healthy alternative to pasta and rice and is a great way to get an extra serving of vegetables in per day.
Zucchini is low in calories, carbs and sugar and can even help to reduce inflammation and improve digestion.
It has a very low score on the glycemic index, has a high-water percentage and is high in essential nutrients like potassium, manganese and antioxidants like vitamin C and Vitamin A.
This super easy recipe using zucchini noodles (zoodles) can be enjoyed at lunch or dinner and will add filling volume to your meal with little extra calories. It’s fast, simple, bursting with flavour and most importantly wholesome and nutritious!
Zoodles With Prawn, Tomato And Chilli Sauce
Ingredients
- 2 Tablespoons coconut oil
- 2 Cloves garlic
- 400g prawns
- 1 Red chilli
- 350g cherry tomatoes
- 1 Tablespoon xylitol (optional)
- Himalayan salt and Black Pepper
- 500g Zoodles
- 2 Tablespoons Olive Oil
Directions
- Heat the coconut oil in a large pan, add the garlic and prawns and sauté until golden
- Toss in the chilli, tomatoes and xylitol and sauté for another minute
- Season well
- Add the zoodles and cook for 2 minutes
- Remove from the heat, drizzle with olive oil
