Apple Berry Dessert

Time to prepare – 10 minutes

I created this recipe as I am not a huge fruit eater and desserts to me always meant something chocolatey or sweet!! So now when I fancy a dessert this is one of my go to favourites.

The ingredients can be changed around depending on what you like or have in your store cupboard.

This recipe is for one large sized dessert or 2 small ones (depends how much fruit you want to eat!!)

Ingredients

  • 1 medium apple
  • 25g blueberries
  • 1 tbsp walnut pieces
  • 1/2 tsp ground cinnamon
  • 1/2 tsp raw honey (optional)
  • 1 tbsp plain yogurt, I use 2% Greek yoghurt

Preheat the oven to 350 F

Preparation

  • Wash, core and slice the apple, place in a bowl or ramekin, sprinkle with blueberries, walnut pieces the cinnamon and a drizzle of honey if you are using it.
  • This is where the alternatives come in – you could add a few goji berries or cacao nibs if you want to increase your superfood consumption or add a pear if you are making a larger dessert.
  • Bake in the oven for 20 – 30 minutes, serve hot with a tbsp of yogurt on the top.

Calories: 160; Total carbohydrates – 31g; Dietary fiber – 6g; Sugars – 20g; Fat – 5g
