Do you have that one favourite comfort meal that brings you back to your childhood? For me it is a bowl of Apple Cinnamon Oatmeal for breakfast, reminds me of home and playing in the snow as a kid with my sisters.
There is nothing better than a warm bowl of oatmeal on a cold winter day! This bowl will fuel your body and keep you satisfied all morning!
Apple Cinnamon Power Oats
Ingredients
- 1/3 cup gluten free quick oats
- 2/3 cup water or unsweetened coconut or almond milk
- 1 tsp organic pure maple syrup
- 1 tsp chia seeds
- 1 tsp flax seeds
- 1 tsp apple pie spice (see recipe below)
- 1 tbsp unsweetened flaked coconut
- 1 apple cored and cut (I prefer to leave them in slices to use as spoons)
- Pecans, walnuts, and pumpkin seeds (or nuts and seeds of your choice)
Instructions
- Boil water in medium sauce pan
- Stir in oats
- Cook on medium for about 1 minute, stirring occasionally
- Remove from heat
- Stir in the following – maple syrup, chia seeds, flax seeds, apple pie spice, and coconut
- Pour into a bowl
- Stir or top with apple and nuts of your choice
Apple Pie Spice
Ingredients
- 5 tbsp ground cinnamon
- 2 tsp ground nutmeg
- 1 tsp ground allspice
- 1 ½ tsp ground ginger
- 2 tsp ground cardamom
Instructions
- Add all ingredients to a bowl and stir
- Put into a spice jar or sealed container for future use
- You can use this in apple pies, apple crumble, on toast, in yogurt or pretty much anything you like!
