Buckwheat Stir-Fry

Ingredients 

  • 2 tbsp vegetable oil
  • 3 tbsp tamari or low sodium soy sauce
  • 2 tbsp honey or maple syrup
  • 1 tsp fresh grated ginger
  • 2 minced garlic
  • 1 yellow onion (chopped)
  • 1 cup broccoli (chopped into small florets)
  • 1/2 red bell pepper (chopped)
  • 1/2 yellow bell pepper (chopped)
  • 1/2 cup sweet peas (frozen or canned)
  • 1/2 cup sweet corn or chopped baby corn

To garnish

  • 1/4 Cup cashews
  • Handful of cilantro
  • Handful of chives
