Creamy Butternut Squash Cashew Sauce

It’s that time of year again, the winter is upon us!! When the seasons change and the weather goes from warm to cold, I experience some inflammation in my joints. Therefore, I have been cutting back on dairy and gluten in my diet, which can trigger inflammation and arthritis pain. This recipe is my go to pasta dish during the winter months!  A great choice for those cold days when you may be craving warm comfort food!! Quick, easy, delicious and vegan!! #WINNING!!

Creamy Butternut Squash Cashew Sauce

Ingredients

  • 1/3 cup of Roasted Butternut Squash
  • 1/3 cup of Raw Cashews
  • 2 TBS Olive Oil
  • 1 TBS Nutritional Yeast
  • 1/4 TSP of Himalayan Salt
  • 1/4 cup of Water
  • Juice of 1/2 Lemon
  • Fresh Black Cracked Pepper

Directions 

  • Add all ingredients to a blender and  blend on high for a few minutes until sauce is thick and creamy!
  • Serve with gluten free noodle of choice over a bed of fresh spinach.
  • This sauce is also perfect served over warm cooked vegetables.
