It’s that time of year again, the winter is upon us!! When the seasons change and the weather goes from warm to cold, I experience some inflammation in my joints. Therefore, I have been cutting back on dairy and gluten in my diet, which can trigger inflammation and arthritis pain. This recipe is my go to pasta dish during the winter months! A great choice for those cold days when you may be craving warm comfort food!! Quick, easy, delicious and vegan!! #WINNING!!
Creamy Butternut Squash Cashew Sauce
Ingredients
- 1/3 cup of Roasted Butternut Squash
- 1/3 cup of Raw Cashews
- 2 TBS Olive Oil
- 1 TBS Nutritional Yeast
- 1/4 TSP of Himalayan Salt
- 1/4 cup of Water
- Juice of 1/2 Lemon
- Fresh Black Cracked Pepper
Directions
- Add all ingredients to a blender and blend on high for a few minutes until sauce is thick and creamy!
- Serve with gluten free noodle of choice over a bed of fresh spinach.
- This sauce is also perfect served over warm cooked vegetables.
