When certain diet rules are followed, the next step is to understand how you would like to treat yourself for following all these rules.

And how do we like to treat ourselves?

That is right! – with a delicious dessert.

Here we offer you gluten-free, dairy-free, sugar-free, keto- and paleo-friendly coconut cake recipe that could be used as a treat or even as a holiday cake.

What Is ‘Healthy’ About This Recipe?

Coconut cakeThe term ‘healthy’ has been used a lot recently, especially in relation to certain meal plans. Recently diets like the Keto diet or the Paleo diet are considered as a healthy way of nourishing your body by a lot of people. In some cases, these diets are claimed to be able to treat even certain food-related diseases.

Therefore, for some ‘healthy’ means eating wholesome foods, while for others it means following one of the modern diets in order to treat a disease or to reach their weight goal.

Many modern diets eliminate certain traditionally used foods, including some foods that are used as baking ingredients such as:

  • gluten;
  • sugar;
  • dairy.

Here we will offer the Coconut Cake Recipe where all these ingredients are substituted by the ‘healthier’ options and are suitable for the majority of the modern diet plans.

However, remember that like with any other dessert moderation is a key!

Why Do We Use Coconut Flour?

Coconut flour cakeAs you probably know gluten is a common allergen that a lot of people are either allergic to or intolerant to. However, a lot of us got used to preparing baked goodies by using wheat flour.

Nowadays there are plenty of gluten-free mixes that could be used as wheat-based flour. However, some modern diets such as the keto and the paleo diet exclude grains completely from the diet plan. That makes the usage of gluten-free mixes impossible as the majority would have some sort of grains incorporated into the mix (such as rice or corn).

However, there are some great flour choices that are not only gluten-free but also grain-free. Some of these options are:

  • coconut flour;
  • almond flour;
  • tapioca flour;
  • arrowroot starch etc.

All of these flours could be perfectly used in baking.

Our personal preferences are almond and coconut flour as they could be easily found in healthy departments of grocery stores and some of them (like almond flour) can be even made at home.

For the Coconut Cake Recipe we used coconut flour for a couple of reasons:

Budget-friendly. When it comes to a big volume desserts like cakes, using flour alternatives could be expensive. And even though the cost of the coconut flour is comparable to others, the usage is smaller as well.

Small usage. As a rule of thumb 1 cup of traditional flour can be substituted with only 1/4 cup of coconut flour. However, more moisture such as eggs will be required.

Nice coconut flavor. The coconut flour will suit perfectly if you are in love into the coconut flavors.

Dairy-Free Frosting – Is It Possible?

coconut cakeWhen it comes to frosting it is really hard to create something that is dairy-free. A lot of healthy recipes use cottage cheese as a substitute for the traditional whipping cream, which works fantastic. However here we would like to offer a completely dairy-free version of frosting that will be compliant with the majority of modern diets.

For the purpose of this recipe, we used full-fat coconut milk that will also add more coconut flavor to the cake.

The only note to add is that you would want to cool the coconut milk for at least 12 hours (ideally for 24 hours) to get the required frosting consistency. You would also want to keep the cake in the fridge to avoid the frosting to become ‘watery’.

As we have mentioned earlier this recipe will suit anybody who supports a healthy lifestyle – from people who follow a wholesome diet to people who follow a specific diet plan like the keto or the paleo diet users.

The cake turns out quite moistured with a nice coconut aftertaste and it could be used as a great add-on on any type of event.

Delicious And Healthy Coconut Cake Recipe

Here is the Delicious and Healthy Coconut Cake Recipe that we hope you and your family and friends will enjoy.

Cake Base Ingredients

  • 10 eggs
  • 1 cup of pure maple syrup
  • 1 cup of coconut oil, melted
  • 1 tbsp of pure vanilla extract
  • 3/4 cup of coconut flour, sifted
  • 1 tsp of baking powder
  • 1 tsp of salt
  • 1 cup of unsweetened shredded coconut

Instructions

  • Preheat the oven to 325F
  • In a big bowl whisk eggs with maple syrup
  • Add melted coconut oil and vanilla extract to the mixture
  • In a separate bowl mix well all dry ingredients
  • Add the dry ingredients to the batter
  • Pour the batter in a 9-inch cake pan
  • Bake for 40-50 mins
  • Cut the base into 2 layers

Frosting ingredients

  • 14 ounce can of full-fat coconut milk
  • 1/2 cup of pure maple syrup
  • 1 tsp of pure vanilla extract
  • 1 cup of unsweetened shredded coconut

Instructions

  • Chill the coconut milk for at least 12 hours in the fridge (24 hours would be the best)
  • Beat the cream with the hand or stand mixer
  • Add the rest of the ingredients and mix well
  • Use immediately as frosting on the cake

Chill the cake in the fridge for 10-15 mins.
