Easy & Fresh Pico De Gallo

Ahhhh Mexico! Beaches, nightlife, rich culture, and oh such tasty food! I can still remember the first time I ever had pico de gallo… I was 13 in the resort restaurant with my family – right beside the beach, Latin music playing and the margaritas flowing (well… not for me… yet anyways).

It was my first time in Mexico and as we sat down to eat, the waiter brought us a huge bowl of pico de gallo and freshly made corn tortilla chips. I was hooked from that day forward and have been playing with different recipes to perfect this yummy, healthy dish! Go ahead and bring a little bit of Mexico into your home, made with all fresh ingredients, you can enjoy guilt free!

*Latin music optional, but recommended*

Easy & Fresh Pico De Gallo

Ingredients 

  • 2 firm medium – large tomatoes
  • 1 medium white onion
  • 1-2 jalapenos (depending on your spice level, I like 2)
  • 1/2 fresh lime
  • 1/4 cup cilantro
  • 2 cloves garlic
  • Salt to taste

Preparation

  • Dice the tomatoes and onion and put in a bowl
  • Roughly chop jalapenos, cilantro and garlic and add to tomatoes and onion
  • Roll the lime on the counter to loosen the juices and then cut in half and squeeze over top of mixture, add some salt to taste and mix all ingredients well
  • Enjoy with organic corn tortilla chips or make your own whole wheat pita chips in the oven
  • That’s it, so easy, and so delicious!
