Oatmeal Bliss

As a young child, whenever oatmeal was being served, I would immediately run away from the kitchen table. Back then, oatmeal seemed to be the most boring meal anyone could possibly have come up with. I mean, oats and water? Where was the fun in that? It wasn’t until years later that I gave oatmeal a decent chance. I may have gone a little bit crazy with the toppings adding apples, banana, mango, strawberries and finishing it off with cinnamon. Now that was a whole party for my taste buds. As time went on, I kept experimenting with different combinations until I found the perfect recipe for me. To this day, I eat oatmeal every single day and have yet to tire from it. It has become a staple part of my life and every morning, I am eager to get up and make a bowl of steaming oatmeal. Below, I share with you my favourite oatmeal recipe! It’s simple and nourishing, I hope you enjoy!

Oatmeal Bliss

Ingredients

  • 1 cup of rolled oats
  • 2 cups of water
  • ½ a cup of plant-based milk (I use homemade almond milk!)
  • 1 cinnamon stick
  • ½ an apple
  • 1 banana
  • 1 date
  • 1 tablespoon of chia seeds, ½ ground flax seeds, 2 teaspoons of pumpkin seeds, 1 tablespoon of hemp hearts
  • Nuts of choice

Instructions

  • In a small pot, combine the two cups of water with the cinnamon stick, add the oats after the water has boiled. Bring down to a simmer and allow the oats to thicken. In the meantime, cut the apple into small cubes as well as the date. I use one date to sweeten my oatmeal, but you can add maple syrup or agave!
  • Place the cut apples into the pot, allowing them to soften a little bit before turning off the stove.
  • I like my oatmeal super hot and creamy, so in a separate pan, I warm up ½ a cup of plant-based milk and pour that over the oatmeal.
  • Now the fun part! I top my oatmeal off with a full banana, chia seeds, flax seeds, pumpkin seeds and hemp hearts. I also vary the nuts I use, most of the time I add a small handful of crushed walnuts or cashews. I finish with a sprinkle of cinnamon (but really, I love cinnamon so I often put more than just a sprinkle!)

The final masterpiece is a nourishing bowl of oatmeal that was inspired during the fall season, but I eat it year round! For some, the amount of oatmeal used is too much, especially with the toppings, but I eat super early and it keeps me full until lunchtime swings around.
