Purple Glory Bowl

Mmmmm, what’s not to love about the glory and wonder of a purple cabbage?! They say eating foods that are in season offer more nutritional value, thus adding more benefit to our health. We are in luck because the purple cabbage is in season at all times!

Perhaps it is the colour, the texture or the shape that intrigues me most, but at the end of the day, this veg packs a punch in terms of nutritional value. Purple cabbage “has a low caloric density compared to other foods, contains notable amounts of carbohydrates and dietary fiber in comparison to its few calories, and contains high levels of vitamin A, C, folate, and vitamin K.” 1

I decided to experiment one day and make this baby into a delicious and nutritious ‘Purple Glory Bowl’ with all the lovely fixings – brown rice, edamame, purple cabbage, carrots, sesame-miso tofu, avocado, and tahini chili sauce!

Purple Glory Bowl

What you will need

  • Brown rice (2 cups)
  • Edamame (1 cup)
  • 1/2 head of shredded Purple Cabbage
  • 1 1/2 large carrots shaved
  • Pack of firm tofu cut into cubes
  • Sesame oil (2 tsp)
  • Sesame seeds (3/4 cups)
  • 2 tbsp miso paste
  • 1 avocado
  • 3 tbsp chili sauce (or siracha!)
  • 1/2 cup tahini 
  • Salt and pepper
  • 1 garlic clove
  • Sesame oil
  • Lime 
  • Rice vinegar
  • Green onion (sliced)

What to do

  • Chop that cabbage so its shredded and beautiful
  • Cook that brown rice the way you like it (add some saffron for added punch)
  • Steam or boil that edamame (however you like it!)
  • Shave those carrots
  • Slice your avocado in long pieces or mini chunks (up to you, friend!)
  • Cube your tofu
  • In a pan, drizzle some sesame oil and throw in your garlic (until fragrant, do not let it burn! Remove after fragrant)
  • Throw in the cubed tofu and add more sesame oil 
  • Put your miso paste in and a little squeeze of lime
  • Cook tofu until its light brown and warm throughout
  • In a bowl, mix tahini, chili sauce, lime, salt and pepper, and some sesame oil – mix, mix, mix (adjust taste as you go!)
  • Add 1 tsp of rice vinegar into your rice
  • Scoop that rice in a bowl or plate or cup (whatever works) – add the tofu on top with shaved carrots, cabbage, edamame, and avocado
  • Drizzle on the tahini sauce and add some green onion and sesame seeds to finish
  • VOILA! Enjoy!
