Recipe For Chick-Less Salad

We all miss certain comfort foods when we begin to make adjustments in our diet. For me, one of the foods I missed was chicken salad. This recipe is a vegan alternative that gives the texture and flavor of one of my favorite foods.

Recipe For Chick-Less Salad

Ingredients

  • 1 15 ounce can of garbanzo beans, mashed
  • 2 stalks of celery, sliced thinly
  • 2 green onions, sliced thinly
  • 2 pickles, sliced thinly
  • 3 tablespoons of mayonaise
  • 1 tablespoon of brown mustard
  • Salt and pepper to taste

Instructions

  • Combine all ingredients into a bowl
  • Serve on whole grain toast, or as a topping on green salad
