Tasty And Healthy Energy Bites

A few years ago I had a serious addiction to store bought energy bars. That is when I thought I would try to make my own which would be healthier and less expensive. I researched and tried tons of different recipes until I came up with my own and my favorite.

I originally rolled them into little bite size balls which I quickly realized became a mess while traveling with them, so now I cut them into bite size squares and carry them in a small Tupperware container which is easy enough to throw in your bag or backpack. The ingredients in the energy bites provide sustained energy with superfood nutrients to work synergistically with your body.

The below ingredients will provide essential fatty acids, proteins, fiber, antioxidants, vitamins such as B complex, A, and E as well as minerals such as calcium, potassium, zinc and iron.

Recipe

(The measurements are approximate-I just throw everything in the food processer and eyeball it to see if it looks right after blending-you can experiment with the consistency to see if it holds together. If the mixture is too dry and crumbly, then keep adding small amounts of wet ingredients-prunes, raisins, coconut oil, etc. until it holds together)

  • Sunflower Seeds-1/3 cup
  • Pumpkin Seeds-1/3 cup
  • Walnuts-1/4 cup
  • Chia Seeds-1/4 cup
  • Ground Flax Seed Meal-1/4 cup
  • Cinnamon-4 Tbsp
  • Gogi Berries-1/4 cup
  • Cacao Powder-4 Tbsp
  • Raisins-1/4 cup
  • Prunes-1/4 cup
  • Coconut oil (unrefined, cold pressed)-3 to 6 Tbsp
  • Alternative additions/substitutes:
  • Medjool Dates instead of prunes
  • Almonds (or nuts of your choice) instead of walnuts
  • CranRaisins instead of regular raisins
  • Chocolate chips instead of cacao powder
  • Oatmeal-1/3 cup
  • Honey-3 Tbsp
  • Matcha Powder-1/4 cup

If possible purchase organic, non GMO ingredients as well as unroasted and unsalted seeds and nuts.

Directions

  • Blend the dry ingredients in a food processor until thoroughly combined
  • Add the raisins, prunes and coconut oil until the mixture has a consistency that holds together
  • Pour the mixture into a non-stick square pan and press flat until about 1.5″-2″ thick (it doesn’t have to fill the whole pan)
  • Cut into even squares-approximately 3″x3″
  • Cover with aluminum foil or plastic wrap and store in refrigerator
