The Perfect Granola

Don’t know what to have for a healthy, nutritious breakfast? Worry not, this post is here to save you! It turns out, granola is a perfect choice you may want to consider. Why?

  • It’s full of fibre, fighting constipation right from your very first meal.
  • It’s filling and thus prevents overeating in the morning.
  • It’s a great food to help you manage diabetes and blood pressure.
  • It fights cholesterol, as it reduces the LDL (bad) cholesterol levels.
  • It’s very energizing (ideal as a pre-workout meal).
  • And it’s delicious!

Besides, it’s a much healthier alternative for commercial, sugar-filled cereals, that you can eat either on the go or slowly at home with some yogurt or milk. Damn, you can even eat it alone!

Now, I know that granola can be quite expensive in the store. That is why, today, we are teaching you how to make your own in 25 minutes!

With the recipe below, you will learn how to make your own granola (which will save you some money) with plenty of nutritious complements, since we will be adding seeds for healthy omega-3 and magnesium, nuts for extra protein, chocolate for a yummy dose of antioxidants, and coconut for skin health.

The Perfect Granola

Ingredients

  • 2 cups rolled oats
  • 1/3 cup maple syrup
  • 1/3 cup nut butter
  • 1/3 cup cocoa nibs
  • 1/2 cup almonds or walnuts
  • 1/2 cup coconut flakes
  • 1/2 cup pumpkin seeds
  • 1 tbsp cinnamon
  • 2 tsp vanilla extract
  • 1/2 tsp Himalayan salt

Instructions

First of all, pre-heat your oven at 180ºC. Now, put in a large bowl the maple syrup, the nut butter (it is best to use one that is soft and runny), the salt, the cinnamon, and the vanilla extract. Whisk the ingredients until they are all incorporated.

Then, add the oats to the bowl. Mix well for a few seconds, and add the rest of the ingredients: the pumpkin seeds, the nuts, the coconut flakes, and part of the chocolate nibs. Fold the ingredients with the help of a spoon, making sure it all becomes sticky in delicious-smelling clumps.

When everything is well incorporated, transfer the mix onto a baking tray, pressing it into a thin layer with your spoon or with a spatula. Bake for 10 minutes, toss a bit of the granola around and bake for 15 more minutes. Check the oven from time to time to make sure it doesn’t burn!

Once it’s done, take out the oven tray and quickly put the rest of the chocolate nibs so they don’t melt completely but still stick in the mix. Let it cool and transfer to a glass jar.
