Vegan Banana Bread

Moist, delicious, and not too sweet. That is how I would describe this fantastic, vegan banana bread that can be made using fair trade and organic ingredients. A treat to the eyes and to the stomach! All of this without any added sugars. Let’s get started!

Vegan Banana Bread

Ingredients

  • 1 cup of pitted dates
  • 2 cups of flour (you can choose almond, wheat, or a gluten-free option)
  • ½ cup of water
  • 3 or 4 ripe bananas
  • 2 tablespoons of chia seeds
  • 6 tablespoons of hot water
  • 1 teaspoon of baking powder
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of cinnamon
  • ½ teaspoon of baking soda
  • ½ teaspoon of Himalayan salt

Instructions

  • First of all, we are going to make our chia eggs by combining the 2 tablespoons of chia seeds with the 6 tablespoons of hot water. Let it rest for about 10 minutes whilst you prepare the rest of the ingredients.
  • Turn on the oven and let it warm up to 180ºC or 356ºF.
  • In a small bowl, we are going to smash the bananas and the dates with a fork until we get a blend very similar to apple sauce. You can also do this in a small blender if it’s easier for you! To this mix, we will add all the liquid ingredients – the water and the vanilla extract.
  • In a bigger bowl, we will mix all the other dry ingredients. The flour, baking powder, baking soda, salt, and cinnamon. Be sure to mix well!
  • It’s time to combine the bowls! Pour the contents of the small bowl to the bigger one and mix very well until you get a soft dough. In this step, you can also add some chocolate nibs, walnuts, or raisins, if you like.
  • Pour the mixture to a long baking mould. I recommend using the ones made for bread, but you can also try any other shape you like. Who would like to receive a heart-shaped banana bread for their birthday?
  • You can add again any extra ingredient at the top of your dough. I like to top mine with chocolate nibs and shredded coconut before popping it into the oven, and a lot of people like to also place some sliced bananas at the top as well for extra flavour!
  • Put it in the oven for about 55-60 minutes.

There you have it! A delicious, tasty, healthy banana bread that you can eat for breakfast, dessert, or as an afternoon snack, alone or with some jam or peanut butter on top!
