Vegan Chocolate Chip Banana Cookies
Makes 16 medium cookies
Ingredients
- 1/2 cup extra light olive oil
- 1/2 cup brown sugar
- 1 tsp pure vanilla extract
- 1 tsp water
- 1/4 – 1/2 cup mashed banana (acts as an egg substitute)
- 1 1/4 cups organic unbleached flour
- 1 tsp baking soda (aluminum free)
- 1/4 tsp himalayan pink salt
- 1/3 – 1/2 cup dairy free chocolate chips
Directions
- Preheat oven to 350F.
- In a medium bowl, cream together with a whisk, the olive oil and sugar.
- Stir in vanilla extract, water, salt.
- Add in mashed banana and whisk well.
- Next, add the baking soda and flour, and gently mix together until a dough forms. DO NOT over mix. Dough will have a sticky consistency.
- Fold in chocolate chips.
- Using a 1.5 tbsp cookie scoop, drop cookie dough onto non-stick baking sheets. Flatten cookies slightly with the back of a mug or spoon.
- Bake for 9 mins or until puffed and slightly browned.
- Allow cookies to sit on baking sheets for a minute, after removing from the oven, and transfer to a cooling rack.
Store cookies in an airtight container for up to 5 days.
