Spicy Veggie Fajita Fiesta

If you are looking for an easy, quick, healthy and delicious dinner time recipe, look no more. It also looks beautiful when you mix different colour peppers.

Fajitas are a Mexican dish, made with mainly bell peppers and onions wrapped in a corn or flour tortilla topped with salsa, guacamole, cheese and sour cream. This dish can be made with chicken or steak strips, but I enjoy them just as much with only veggies.

Peppers are a great source of vitamin C, B6 and A, are anti-inflammatory and filled with anti-oxidants. I absolutely love when delicious meals are healthy too.

I like to include at least one of each colour pepper to this recipe, just to make it look festive and colourful. I also prefer using red onions in this dish, they are so delicious!!!! I recently discovered cooking with red onions and am obsessed. This recipe also includes mushrooms. I am not a fan of mushrooms because of the texture, but in this dish, you can hardly tell they are there and they really add a nice flavour. I also buy them pre-sliced to save time.

I enjoy my food with a kick, so I like to add jalapenos or hot peppers to this recipe, but if you enjoy it a bit more mild, leave the jalapenos out.

Spicy Veggie Fajita Fiesta

Ingredients

  • 4 bell peppers in various colours cut into long strips
  • 1 red onion cut into big strips
  • 1-2 jalapenos sliced
  • One package of sliced cremini or white onions, about 8 ounces
  • 4 cloves of garlic minced
  • 2 tablespoons of vegetable oil
  • 2 teaspoon chili powder
  • 2 teaspoon Himalayan pink salt or table salt
  • 2 teaspoon paprika
  • 2 teaspoon pepper

Toppings to your taste

  • Salsa or fresh diced tomatoes
  • Guacamole or avocado slices
  • Shredded Tex Mex cheese or dairy-free cheese
  • Sour cream
  • Rice

Directions

Heat oil in a large skillet or frying pan over medium-high heat. When the oil is warm, add half of the chili powder, salt, pepper and paprika. Cook until fragrant, about 1 minute. Add the sliced peppers, onions, jalapenos and the rest of the spices on top. Stir often to evenly cook the veggies until the peppers begin to soften, about 5 minutes.

Add the mushrooms and minced garlic and continue to cook for another 5-7 minutes until the mushrooms have shrunk, and the peppers and onions have softened. Turn up the heat for the last minute, until it’s sizzling and enhances all the flavours. Then commence your fajita fiesta.

How to build the perfect fajita:

  • Lay tortilla flat
  • Smear sour cream over tortilla
  • Add rice and spread to the edges
  • Add vegetable mix
  • Sprinkle some cheese on top
  • Add salsa
  • Add guacamole
  • Wrap
  • Enjoy!

These fajitas taste even better the next day after marinating in their own juices, so you can enjoy them again and again.
