Vegan Trinidadian Lentils & Beans

Growing up, my best friend was Trinidadian. I spent ALOT of time at her house, practically just another part of the family and my memories are potent with the delicious, home-cooked Trini food we would all eat together around her table. 

This recipe is simple, nutritious and so delicious it has stood the test of time with my own kids, their friends and, it’s definitely a regular Party Pleaser food we bring to special events. Thank you to my second mom for this inspiration –  I remember this with such love and kindness and just a little bit of heat!

For you Vegans out there – Enjoy! A recipe full of protein, healthy fats and complex carbs made just for you.

Ingredients 

  • 2 Canned tomatoes, chopped (keep the juice)
  • 1/2 Onion, chopped
  • 2-3 Garlic cloves, minced
  • 2 Green onions, finely diced
  • 2 TBSP Fresh coriander, chopped
  • 1 pot spoon of ketchup
  • 1 Lg Tin organic lentils, rinsed
  • 1 Sm Tin organic kidney beans, rinsed
  • 2 TBSP Coconut oil
  • 1 TBSP Brown sugar
  • Fresh ground pepper/Sea salt to taste
  • 1 TSP Curry powder (optional)
  • 1 TBSP Matouks hot sauce (optional)

Directions 

  • Mix together in a bowl – tomato, onion, garlic, green onions, coriander, ketchup
  • Put pot on MED heat, add oil and brown sugar and heat and stir until sugar turns dark. Add curry here if desired
  • Add mixture to pot and stir for 3-5 minutes
  • Add lentils and beans and stir for 1-2 mins
  • Add juice and water if needed and stir. Add Matouks if desired
  • Turn heat down to MED-LOW and let simmer for 15-20mins
