I found this recipe online and absolutely love how simple it is to throw together especially when you have run out of ideas for what to cook for supper. I have made a couple of personal tweaks to the recipe I hope you enjoy it us much as I do. It is a super healthy recipe which not only is filling but tasty as well.
Vegetarian Sweet Potato And Lentil Shepherds Pie
Ingredients
- 2 large chopped carrots
- 1 large diced onion
- 2 cloves of garlic finely chopped
- 1 cup of peas also can use frozen
- 2 medium sized peeled and diced sweet potatoes
- 1 cup of rinsed cooked red or brown lentils
- 1 tsp. of Italian seasoning
- 1 tsp. of rosemary
- 2 tbsp. of butter
- ¼ cup of coconut milk
Directions
- Preheat oven to 350 degrees
- In a large pot cover sweet potatoes with 1 inch of water, bring to boil, cook till fork easily slides through potatoes, strain and mash potatoes. Add the butter and coconut milk and combine leaving the potatoes with a nice creamy texture, set aside.
- Prepare lentils according to package and set aside.
- In a large non-stick frying pan, on medium heat, soften onions, garlic and carrots in small amount of water; continue to add water to prevent burning. Once softened add cooked lentils, Italian seasoning and peas, cook until peas are done then remove from heat.
- In a 9×16 oven safe dish add the lentil mixture first, spread it out evenly and then add the mashed sweet potatoes on top spreading out evenly, sprinkle the rosemary on top. Cook for 40 mins. Serve immediately,
