Breakfast is the most important meal of the day to me. It gets me up and going and this steel cut oats breakfast is one of my favourites especially now in the fall, plus it’s so easy to make!
Steel cut oats is a good choice because it’s so rich in fibre and protein and keeps me filled all through my morning activities until lunchtime, plus it goes so well with my other favourite ingredients like cinnamon (helps lower blood sugars and cholesterol) and greek yogurt.
I choose Greek yogurt because I like the thick creaminess of it. Always try to buy the ones that say they contain live and active cultures so they have the good probiotics your gut wants!
Warming Steel-Cut Oats Breakfast
Ingredients (makes 2 servings)
- 1/2 cup of steel cut oats
- 1 soft banana (I like the soft ones because I like the mushy texture with the oats, but it’s really up to you)
- 2 cups of water
- 1 tbs coconut oil
- 1 tbs honey
- 1 tsp ground cinnamon
- 2 tbs flax seed
- 1/2 cup of organic greek yogurt
Directions
- Chop up the banana up into small diced up pieces, mix in coconut oil, honey and cinnamon, stir until evenly combined
- Grind up flaxseeds and place aside (only grind them when you need them so they don’t go rancid)
- Simmer the steel cut oats with water in a small pot, stir constantly so it doesn’t stick to the bottom, until you have a nice creamy consistency
- Once your oats are ready, spoon them into two serving bowls, and top each of them off with the banana mixture
- Scoop the yogurt on top and sprinkle the ground flaxseed
- Enjoy!
