If you’re anything like me, dessert is your favourite thing to create in the kitchen! I will admit, that can be a little dangerous at times…but it’s so fun finding a recipe and then creating your own healthy version of it! These brownies are just that!
When I think of a brownie, I think of a super soft, gooey, chocolatey piece of heaven. That’s exactly what these are! Except, you also get some hidden gems like added protein, fibre, and antioxidants! The best thing about these brownies is that they are gluten and dairy-free! They also have 1lb of black beans in them. Trust me, you can’t even taste them! Instead, they add this amazing fudge-like texture. So if you like a dense, chocolaty brownie- you’ve got to try these!
Espresso Black Bean Brownies
Ingredients
- 1 1lb. can of organic black beans
- 1/2 cup of cacao powder
- 1/2 cup of pure maple syrup
- 1/4 cup of coconut sugar
- 2 tsp of vanilla paste
- 1/2 tsp of baking powder
- 1/2 tsp of sea salt
- 1 tbsp of organic expresso powder
- 1 cup of dairy-free dark chocolate chips (half-melted, half left whole)
- 2 organic free-range eggs
Chocolate Glaze
- 1/4 cup of coconut oil
- 1/4 cup of pure maple syrup
- 2- 3 tbsp of cacao powder
Instructions
Blend all the above ingredients together in a food processor or high-speed blender. This should produce a brownie-like consistency. Place in a parchment paper-lined 8×8 baking pan and bake for 25-30 minutes at 350 degrees.
Let cool and add icing. Enjoy!
