Apple Cinnamon Power Oatmeal

Do you have that one favourite comfort meal that brings you back to your childhood? For me it is a bowl of Apple Cinnamon Oatmeal for breakfast, reminds me of home and playing in the snow as a kid with my sisters.

There is nothing better than a warm bowl of oatmeal on a cold winter day! This bowl will fuel your body and keep you satisfied all morning!

Apple Cinnamon Power Oats

Ingredients

  • 1/3 cup gluten free quick oats
  • 2/3 cup water or unsweetened coconut or almond milk
  • 1 tsp organic pure maple syrup
  • 1 tsp chia seeds
  • 1 tsp flax seeds
  • 1 tsp apple pie spice (see recipe below)
  • 1 tbsp unsweetened flaked coconut
  • 1 apple cored and cut (I prefer to leave them in slices to use as spoons)
  • Pecans, walnuts, and pumpkin seeds (or nuts and seeds of your choice)

Instructions

  • Boil water in medium sauce pan
  • Stir in oats
  • Cook on medium for about 1 minute, stirring occasionally
  • Remove from heat
  • Stir in the following – maple syrup, chia seeds, flax seeds, apple pie spice, and coconut
  • Pour into a bowl
  • Stir or top with apple and nuts of your choice

Apple Pie Spice

Ingredients

  • 5 tbsp ground cinnamon
  • 2 tsp ground nutmeg
  • 1 tsp ground allspice
  • 1 ½ tsp ground ginger
  • 2 tsp ground cardamom

Instructions

  • Add all ingredients to a bowl and stir
  • Put into a spice jar or sealed container for future use
  • You can use this in apple pies, apple crumble, on toast, in yogurt or pretty much anything you like!
