A bowl of awesomeness, this salad is perfect for bringing you the refreshing feeling after being in the hot summer heat all day it’s become a favourite of mine after my boyfriend’s mom made it at one of our family suppers. Every bite you take is truly full of goodness so I thought I would share it since we all know sharing is caring. It’s super easy to make and definitely something healthy and quick to whip up on those hectic days or when you have run out of ideas this salad is for you. Also this salad is even better the next day left to marinate in the fridge.
Black Bean And Quinoa Superfood Salad
Ingredients
- 2 Cups of cooked quinoa
- 1 Red pepper, chopped
- 1 Yellow pepper, chopped
- 1 Can of black beans, drained and rinsed
- 1 Clove of garlic (pressed)
- Handful of cilantro roughly chopped
- Juice of 1 lime
- 1 Tsp cumin
- 1 Tsp sea salt
- ¼ Tsp cayenne pepper
- ¼ Cup extra virgin olive oil
Directions
- Prepare quinoa according to package when finished allow cooling to room temperature before adding to large mixing bowl
- Press garlic and set aside
- Mix cumin, cayenne pepper and sea salt together in a small bowl
- Dice peppers and roughly chop cilantro add to large mixing bowl
- Drain and rinse can of black beans and add to large mixing bowl, combine with pressed garlic, dry ingredients and extra virgin olive oil, mix thoroughly and refrigerate salad
Tip: Salad is best when left to marinate over night
