Chocolate Protein Cheesecake

Like most people, I love desserts. The problem is most desserts are filled with refined carbohydrates, sugar and saturated fats, they often leave you feeling bloated and uncomfortable.  I love finding new ways to make my favorite recipes healthier, allowing me to indulge in my cravings while staying on track with my nutrition.

This chocolate cheesecake will satisfy your sweet tooth! But unlike ordinary cheesecake it is full of protein, healthy fats & even antioxidants!

Chocolate Cheesecake with Almond Flour Crust*

Cheese Cake filling:

  • 1 package of low fat cream cheese
  • 2 cups plain low fat greek yogurt
  • 2 tablespoons stevia
  • 4 flax eggs (4 tablespoons ground flax & 8 tablespoons water, combined, let sit for a few minutes and whisk)
  • 1 teaspoon pure vanilla extract
  • 1/2 cup unsweetened almond milk
  • 3 tablespoons raw cocoa powder
  • 1 scoop chocolate protein powder

*Combined all ingredients in a bowl or food processor, mix until the consistency is smooth.

*Almond Crust (Optional)

  • 2 cups almond flour
  • 2 tablespoons coconut oil
  • 2 tablespoons ground flax seed

*Mix all crust ingredients in a food processor

Preheat the oven to 350 degrees. Take your crust and flatten it out to completely cover the bottom of your pan.

Bake the crust for 10-12 minutes, until the edges start to brown slightly, then remove it from the oven and lower the temperature to 325 degrees.

While you’re waiting for the temperature to adjust, scoop the cheese cake mixture on top & smooth it out evenly.

When the oven is ready place the cheesecake in the oven & bake for 40-55 minutes, (depending on how thick your cheesecake layer is) It should be fairly firm in the middle when it’s ready.

Place the cheesecake in the fridge to chill for a few hours before you enjoy it!!
