Crowd Pleasing Coleslaw

Not only is this coleslaw recipe of mine a family favourite but it is definitely a crowd pleaser too. I can’t even begin to count the number of times I have brought this salad to a function and afterwards had people lining up to get the recipe from me. So I figure I may as well just share it with the masses so everyone can appreciate this yummy slaw.

The nutritional star of this salad is the cabbage which is rich in phytonutrients, antioxidants, vitamins and minerals. Cabbage is rich in phytonutrients like brassinin, leutein and sulforaphane that have been shown to protect against certain types of cancer and help to reduce LDL, which is the bad cholesterol, in the blood.

Fresh cabbage is also a great source of Vitamin C and selenium, antioxidant powerhouses that neutralize free radicals and prevent damage to our cells and tissues.

It is also a great plant-based source of essential amino acids. The essential amino acids are those that the body cannot manufacture and therefore we must get them from food. Amino acids are used in the body to build up the protein, muscles and tissues.

Cabbage also contains an impressive amount of minerals including the detoxifying minerals sulfur and chlorine, as well as magnesium, iron and potassium.

So not only is this coleslaw extremely nourishing and healthy but it also tastes fantastic!

Crowd Pleasing Coleslaw

Ingredients

For the salad

  • 8-10 cups of freshly grated green or purple cabbage or a mixture of the two
  • 4 scallions finely chopped, white and most of the green
  • 1/2 cup of slivered almonds, toasted (I do this in a skillet over medium heat for approx. 10 min, mixing often)
  • 1/4 cup sesame seeds, toasted (mix with almonds to toast)
  • 1/4 cup hemp hearts

For the dressing

  • 2/3 cup olive oil
  • 1/3 cup apple cider vinegar
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons fresh water
  • 1 tsp toasted sesame oil
  • 1/4 tsp sea salt

Directions 

  • Place all salad ingredients in a large bowl an stir to combine.
  • Put all dressing ingredients in a mason jar and shake vigorously to emulsify.
  • Pour dressing over the salad and stir to combine.
  • Enjoy this salad right away or if you can, let it sit for a good hour so the flavours can really soak in.
