Dates And Walnut Cake

Dates are one of the best sweet and versatile foods that can regulate the digestive process. These delicious fruits contain oil, calcium, sulfur, iron, potassium, phosphorous, manganese, copper and magnesium which are all beneficial for health. They also contain vitamins such as thiamin, riboflavin, niacin, folate, vitamin A and vitamin K.

Walnuts are rich in omega-3 and major minerals found in them like calcium, iron, magnesium and major Vitamins include vitamin C, several B vitamins including B12, vitamin E, vitamin K, and vitamin A. One of the health benefits of walnuts consumption is that it improves the metabolism in the body.

As they are rich in several vitamins, minerals, and fiber, a recipe combined with both of these is a major boost of energy. A slice of this cake will give the energy to run a marathon.

This recipe is for lacto-vegetarian

Dates And Walnut Cake

Ingredients

  • 1 Cup whole wheat flour
  • 20 seedless dates
  • 3/4 cup milk
  • 1/2 cup brown sugar
  • 1/4 cup butter
  • 2 tsp baking soda
  • 1/4 cup chopped walnuts

Instructions

  • Soak dates in warm milk for about 15 minutes
  • Grind soaked dates along with milk and sugar into a smooth paste
  • In wide bowl mix wheat flour, baking powder, butter and dates paste. Make sure no lumps are formed
  • Grease a pan with oil and dust with flour
  • Pour it into a baking pan. I used a banana bread pan
  • Bake it in the oven for 30 to 35 min at 325 F
  • Check with a toothpick or fork to see if it is cooked in center. If the toothpick comes out clean it is done
  • Cool it for sometime and invert it on cooling rack or flat surface and wait for it to cool
  • Cut into pieces and serve

A Healthy and yummy cake is ready.
