Here’s a handy, nutritious snack that’s easy to bring to the office and prepare. It contains proteins, thanks to edamame beans, lipids, thanks to the coconut oil, and fibre, thanks to the raw vegetables that you use to taste it.
Edamame Hummus
Ingredients
- 2 cups of edamame
- 2 tablespoons coconut oil
- 1 tablespoon of vegan mayonnaise
- 1 tablespoon lemon juice
- salt and pepper to taste
Instructions
- Put all the ingredients in a blender
- Mix until you get a creamy hummus
Eat with raw vegetables
