Egg-cellent Dip!

Egg salad… Who doesn’t love egg salad sandwiches? Eggs are packed full of vitamins and minerals: Choline, B12, Riboflavin (B2), Pantothenic Acid (B5), Phosphorus, and Vitamin D to name a few. Perhaps after all of the negativity eggs have been getting over the years, it’s time to switch things up and celebrate eggs! So how about a twist on an old classic – Egg Salad Dip!

Oh yes, I did! I know what you are thinking- like- WHAT IS SHE THINKING? or THAT’S NASTY! I promise it is a delight. The texture of the dip is just like hummus and you can either make and serve it right away or make it the night before. Egg salad dip is a healthy, inexpensive, and gluten-free dip option. Haven’t the words “healthy” and “gluten free” immediately sparked your interests? And besides, how many dips are actually healthy when you think about it? This dip is sure worth a try!

Egg Salad Dip

Ingredients

  • 5 Chilled Hard Boiled Eggs
  • 2 Chopped Green Onions
  • 1/3 Cup of Homemade or Store-Bought Mayo
  • 1/4 tsp of Paprika
  • 1/4 tsp of Sea Salt
  • 1/4 tsp of Fresh Cracked Pepper

Directions

  • Peel eggs and place in food processor
  • Chop green onions and add to the food processor
  • Add mayo and seasonings to the mixture
  • Place lid on processor and mix on low for about 1 minute
  • Serve chilled with sliced cucumbers, sliced baguette, or your favourite crackers
