My recipe for granola is a favorite in the cafe where I work. It is served with poached fruit and a vanilla panacotta, at home we have it with naturally sweetened strawberry yogurt and almond milk. I love starting my day with this meal as it’s super quick, super healthy it’s punched full of great nutrients and keeps me going till mid morning snack. Change things up and use different nuts and seeds, try using cacao powder in the roasting stage or orange zest, it’s really easy to get creative with granola!
Buckwheat/Puffed Rice Granola
Ingredients
- 2 Cups Puffed Buckwheat
- 2 Cups Puffed Brown rice
- 1 Cup Buckwheat (sprouted or activated works)
- 1 Cup Coconut Flakes
- 1 Cup Almonds
- 1/3 Cup Chia Seeds
- 1/3 Cup Hemp Seeds
- 1/3 Cup Sesame Seeds
- 1/2 Cup Pumpkin Seeds
- 1/2 Cup Sunflower Seeds
- 1/2 Cup Coconut oil, melted
- 1/2 Cup Maple syrup
- 2 Tbsp ground Cinnamon
- 1 Tbsp Vanilla extract
- 1 Tsp Pink Salt
- 1 Cup Goji Berries
- 1 Cup Inca Berries
- 1/3 Cup Cacao Nibs
Method
- Pre heat your oven to 150 Celsius fan forced and line two large baking trays.
- In a large bowl mix together the grains, nuts, seeds, coconut and cinnamon
- then place aside. In a pot bring the oil, maple and salt to a quick simmer then
- poor over the dry ingredients. Its important here to make sure you spend the time
- thoroughly mixing everything to insure even coverage.
- Place over the lined baking trays and spreed evenly and bake for 30-40 min stirring every 10 min until golden brown.
- Leave to cool then mix over the berries and cacao nibs, keep in air tight containers/jars.
