Greek Buddha Bowl
Ingredients
- 2 cups spinach
- 1 cup cooked quinoa
- 1/4 cup chopped red pepper
- 1/4 cup chopped green pepper
- 1/2 cup chopped cucumber
- 1/8 to 1/4 cup of chopped red or white onion
- 1/3 cup chickpeas
- 3 sliced olives
- 2 tbsp hummus
- 1 tbsp crumbled goat feta
Sauce
- 2 tsp mayo
- 1 tbsp chopped fresh dill
- 1 clove chopped garlic
- lemon juice
- water to thin
- cilantro
Instructions
- Combine sauce ingredients.
- Layer all ingredients into a bowl and top with sauce
