Whether you are craving a nutty muffin or hankering for a fruity filling, these vegan muffins will do the trick. The title reflects my indecision in picking one over the other because they are equally delicious. So get baking and try them both out and decide for yourself. Use organic ingredients as much as possible. Yields: 1 dozen muffins.
Healthy Vegan Banana Walnut/Blueberry Muffins
Ingredients
- 2 medium ripe bananas mashed
- 1/2 cup coconut sugar or raw cane sugar
- 1/3 cup EVOO (extra virgin olive oil) or coconut oil melted
- 1 flax egg (mix 1 tbsp flax + 3 tbsp water, let stand for 5 minutes)
- 1 tsp vanilla
- 1 1/2 cup whole wheat cake & pastry flour or other similar flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 cup coconut milk
- 1/2 cup blueberries or crushed walnuts
Directions
- In a large mixing bowl, beat together the bananas, sugar, oil, flax egg and vanilla. Mix well.
- Using another bowl, combine the flour, baking powder and baking soda.
- Stir this flour mixture into the banana bowl, stir in the coconut milk and lastly, fold in the blueberries or chopped walnuts.
- Scoop into your muffin tin and bake at 375 degrees Celsius for 18-20 minutes.
