Try this delicious Kale Salad!
Ingredients
- 2-3 bunches of fresh kale , approx 1 lb (washed and tough midrib removed)
- 1/4 cup dried cranberries or goji berries
- 1/3 cup slivered almonds (browned lightly in dry skillet)
- 1/4 cup balsamic vinegar (any flavour)
- 3 Tbs oil oil
- 1 Tbs of honey
- Himalayan pink salt & pepper to taste.
- 1/4 cup freshly grated parmesan cheese.
Directions
- Whisk together balsamic, olive oil, honey, salt and pepper.
- Cut kale into 1/4 inch wide slices; place kale in large bowl.
- Add dried cranberries, almonds and dressing half an hour before serving.
- Add parmesan just before serving.
