I am a big proponent of making my own lunch. It’s generally a healthier way to go, can be customized to your liking, and not to mention cheaper! To put my money where my mouth is, so to speak, I wanted to share with you one of my favourite lunch-time recipes. As always, feel free to customize and get creative!
Kale Salad with Hummus & Tuna
Serves 1
Ingredients
- 4-5 leaves of kale – curly or lacinato will work
- 1 heaping tablespoon of jarred or home-made hummus
- 1/3 – 1/2 can of ocean wise, pole & line caught wild tuna
- 1/3 red, yellow, or mixed bell pepper, julienned
- 1 teaspoon of raw sunflower seeds
Directions
- Wash and dry Kale Leaves
- Separate from Stem and chop into bite size pieces
- Place into a medium bowl, add hummus and toss until coated and add a bit more hummus if necessary
- Add bell peppers, tuna, and sunflower seeds and give it one more toss
- Transfer to smaller bowl and enjoy!
